Recipe Corner: Take the edge off this hot weather with a cool salad bursting with the flavors of summer. For a refreshing salad, toss 3 cups cubed watermelon with 3 large tomatoes, cubed. Add a half-cup crumbled feta and sprinkle with some chopped mint. Add some salt or fresh cracked pepper to taste, or olive oil and vinegar. Enjoy!
