Our basic skills class was a total success.  Two solid hours of instruction and the students were still slathering for more.  The syllabus included sauteing, searing, poaching, brining, blanching, frying and carving.  We even cracked the code of the souffle with an uncompromisingly delicious coffee cup souffle complete with sauce.  

Even we don't know how we did it.  In this instance, genius is not hyperbole.

Knife Skills 

Dull knives are dangerous. Sharp ones are too.  
Dean Pollak sacrificed the tip of her finger to demonstrate
that even experts cut themselves from time to time.  
For once Dean Manigault was happy to step aside and let Dean Pollak begin 
the knife skill lesson with a first aid demonstration.

Important Knife Facts:
• Never put knives in the dishwasher
• Wash, dry and sharpen knives after every use
• A cheap knife never overcomes its defects
• For real cooking the Deans insist you invest in at least one quality knife

Food Allergy

Allergy Etiquette

We have simply had it.  
Not one more word.  
We mean it.
Unless your allergy is truly life threatening
(and we are beginning to want to put that
to the test) then do not burden us with one
syllable about the parameters of your diet.
Boring.  
This is like discussing your gall bladder.  
Fascinating to you, but to no one else.  

Those of you complaining about what we serve
are in danger of stopping home entertaining 
in its tracks.

Dog Days

Dog Days of Summer

Let's face it; 
entertaining in this heat 
even daunts the Deans.  
We have turned our energy to
whoring ourselves out to any friend with a house 
north of the Canadian border.

Even a dacha in Siberia would
be preferable to sweltering here in Charleston.

Dean Manigault's children's
lemonade stand melted on the
front steps leaving only a tiny puddle.  

Definitely time to take a
business trip to investigate the
tastiest Maine lobster rolls. 
If you can get as far as
New York City
try the ones at the
John Dory Oyster Bar
(located at 1196 Broadway).
