Collegeville Artisan Bakery

Steve Nelson and Mary Ann Fredericks don’t take days off. Seven days a week, they can be found at the Collegeville Artisan Bakery doing anything from separating eggs by hand to putting together their signature almond croissants with homemade almond cream.

Twelve years ago, in a state of semi-retirement, Steve took baking courses on a whim at the National Baking Center at Dunwoody in Minneapolis. There, he was introduced to European-style artisan baking. This was during what was considered the artisan bread movement in Minnesota. He took his knowledge all over the state, baking in towns such as White Bear Lake. Mary Ann sold directly at farmer’s markets such as in St. Joseph.

In 2006, the Collegeville Artisan Bakery was officially licensed. With the strong demand generated, the operation required the larger space which they rented in St. Joseph industrial park. Eventually they built their current facility next to their home. Because of its location in the forest near Saint John’s University, many assume that the bakery is associated with the University; it is not, though the Bakery has provided the host for SJU Mass.

Many things set the Collegeville Artisan Bakery apart from similar industries in the area. Most importantly, Steve has mastered fermentation, an essential and complex process in true artisan baking. Fermentation is the effect of the consumption of yeast by sugar. The fermentation mastery includes precise control of the acidity, which can enhance bread’s flavor or make the dough stronger. Steve and Mary Ann also use as little machinery as possible; the only real machines found in the Bakery are mixers, ovens, and rollers. Everything else, they do by hand. They make many substances that bakers can usually get premade, such as croissant dough and almond paste. Last but not least, Steve and Mary Ann prefer to use local ingredients for the best taste. The honey they use comes from Whiskey Creek farm, and they often use eggs from Kuebelbeck’s—two big names among the vendors to the Minnesota Street Market!

Steve and Mary Ann do not have any plans to expand the business of the Collegeville Artisan Bakery, preferring their work to remain small and local. That way, says Mary Ann, it is more unique. They sell to six farmer’s markets in the area, including the St. Joseph farmer’s market, and also distribute to the Minnesota Street Market and the Local Blend. To keep their bread as fresh as possible, Steve and Mary Ann bake all night before delivery days.

Though the work is physically demanding, it is rewarding. Steve and Mary Ann have each expressed that they feel joy in creating the artisan bread that comes from the Bakery, and are always looking to increase quality by learning new aspects of baking.

Cookbook Club Update: Spices of Life

The Minnesota Street Market Cookbook Club, headed by Maryjude Hoeffel, had its first meeting this month and is already a success. The club, which meets in the Minnesota Street Market every second Sunday of the month from 4 to 6 p.m., currently has six members, but welcomes more.

The Minnesota Street Market holds a copy of the cookbook being used this month, “Spices of Life” by James Beard award holder Nina Simonds.

Each member of the Cookbook Club selects a recipe from the chosen book and approves it with Hoeffel before the next meeting. Hoeffel helps arrange a variety of selections so that different types of food and different courses—entrées, appetizers, and desserts, to name a few—are represented at each meeting. Members of the club then bring their finished creations to the meetings and sample each other’s work. This offers an opportunity to learn different cooking techniques, try new food, discover new spices and flavorings, and socialize with others over a meal. At the end of the meeting, leftovers are packaged and distributed throughout the club to take home.

“Spices of Life” was chosen not only for Simonds’ renown in the culinary field, but because it offers several recipes for healthy eating and represents a wide variety of intercultural cooking techniques and styles of spice. Once this book has been used to its full potential, the club will select the next book together.

Hoeffel got the idea for the Cookbook Club when she worked at Bookin’ It, a bookstore in Little Falls. Bookin’ It had hosted many book clubs in the past, and an interested customer proposed the idea of a cookbook club. Hoeffel took this idea to the Minnesota Street Market. It is a rare phenomenon—not many cookbook clubs exist.

At the meeting, the six current members brought a variety of food. Present were Hoisin Roasted Butternut Squash, Winter Roasted Vegetable Salad (including sweet potatoes, fennel bulbs, acorn squash, and onions), Crispy Baked Potato Pancakes, Roasted Beets with Balsamic Vinegar and Ginger, and Jewish Coffee Cake. Hoeffel brought a Lemon Curd Sponge Cake Roll.

Hoeffel intends for the Cookbook Club to grow, so if this interests you, please contact her. You will be pleasantly rewarded with the opportunity to both create and experience wonderful food.

To join the Cookbook Club, simply contact Maryjude Hoeffel at mjhoeffel@gmail.com. Membership with the Minnesota Street Market is not required in order to join the Cookbook Club. CSB/SJU students are welcome and encouraged to join. Recipes from “Spices of Life” will also be used for the December meeting on the 9th and the January meeting on the 13th.
