almost game day and this year, we invite you to root for your favorite
player while also showing a little love for another American hero: the
small farmer. These folks work harder than almost anyone to run the
farm, raise their animals with respect, and deliver to you the highest
quality, best tasting meat available in the world. Our farms, such as Long Meadow Ranch
and Lazy Farm, are instrumental in preserving some of the oldest breeds
of livestock in this country—cattle and pigs whose genes date back even farther
than the first pigskin.

Simmer our Berkshire or Red Wattle picnic shoulder for the most tender and delicious pulled
pork sandwiches. Chef Josh Sobel from Court Street Grocers shared his recipe with
us below.

Ingredients:
1 bone in picnic shoulder
Dry rub- recipe follows
2 quarts Ginger ale
2 quarts cold water
6 cloves garlic
2 bay leaf
1 onion- peeled & cut in half
Rub pork with dry rub and let sit over night
Place pork in high sided pan, along with garlic , onion, bay leaf, ginger ale , & water.
Cover tightly with foil and place in 300 degree oven. When pork is tender, 7-8 hours remove from oven, uncover and let rest in braising liquid preferably overnight.
To pull pork, reheat until warm enough to handle. Shred pork with hands or tongs.
To reheat. Place pulled pork in sauté pan and add small amount of braising liquid. Bring to a simmer (never boil) for 2 minutes and serve.
Dry rub recipe:
Kosher salt : 1 cup
Black pepper: 1 tablespoon
Brown sugar: 1/2 cup
Chili powder: 1 tablespoon
Mustard powder: 1/4 cup
Whole coriander: 2 tablespoons
Whole cumin: 1 tablespoon
Toast cumin and coriander, and grind in spice grinder. Combine spices with remaining ingredients.
