New Vendors are Coming!

Interest in the Lubber Run Farmers Market continues to grow and we expect to add several new vendors over the course of the next several weeks. The first of these starts this week and is profiled below.  Please continue to support the Market by doing your shopping at Barrett Elementary School in Arlington on Saturday, August 18, from 8:00 am to 12:00 pm.  We'll see you at the Market!

Mesisam the Ethiopian Eatery of Washington, D.C.


Mesisam the Ethopian Eatery is a local D.C. eatery that specializes in Ethiopian cuisine for sampling at the Market or taking home to savor later.  Featuring numerous vegetarian options, including vegan choices, ranging from lentils to collard greens to eggplant to cabbage, as well as chicken dishes native to Ethiopia -- all served with (or more authentically, on top of) spongy injera (Ethiopian bread), Mesisam is a terrific addition to the Lubber Run Farmers Market.  Welcome our newest vendor by stopping by to sample the goodness!

Pepper Ricotta Primavera
Garlic, peppers, and herbs top creamy ricotta in this colorful, meatless skillet meal you can make in just 20 minutes.
 
Ingredients:
  • 1 cup part-skim ricotta cheese
  • 1/2 cup fat-free milk
  • 4 tsp. olive oil
  • 1 garlic clove, minced
  • 1/2 tsp. crushed red pepper flakes
  • 1 medium green pepper, julienned
  • 1 medium sweet red pepper, julienned
  • 1 medium sweet yellow pepper, julienned
  • 1 medium zucchini, sliced
  • 1 cup frozen peas, thawed
  • 1/4 tbsp. fresh oregano, minced, or 1/4 tsp. dried oregano
  • 1/2 tsp. fresh basil, minced, or 1/4 tsp. dried basil
  • 6 ounces fettuccini, cooked and drained

Directions:

Whisk together ricotta cheese and milk; set aside.  In a large skillet, heat oil over medium heat.  Add garlic and pepper flakes; saute 1 minute.  Add next seven ingredients.  Cook and stir over medium heat until vegetables are crisp-tender, about 5 minutes.  Add cheese mixture to fettuccine; top with vegetables.  Toss to coat.  Serve immediately, with parmesan cheese to taste.
