The Dog Days of Summer!

Ancient Egyptians kept an eye out for the rising of the Dog Star, Sirius, which heralded the flooding of the Nile, hence, the "Dog Days."  We've had some experience with flooding ourselves this year, but we're mostly just happy that the Dog Days also bring us fruits and vegetables at their absolute freshness peak!  Check it out at the Lubber Run Farmers Market at Barrett Elementary School in Arlington on Saturday, August 11, from 8:00 am to 12:00 pm.  We'll see you at the Market!

Hog Haven Farm of Columbia, Virginia


Hog Haven Farm is a Central Virginia farm operating on 22 acres that raises heritage breed, Animal Welfare Approved, pasture-fed hogs.  Owner Rob Staples and the rest of the Hog Haven Farm crew offer a variety of pork products, including various pork cuts and sausages, at the Market.  The main attraction, though, is their cooked-on-site sausage, egg, and cheese English muffin sandwiches!  Yum!!  Pick up one of these -- aptly named "The" Breakfast Sandwich -- on your next trip to the Market.  And be sure to try one of Hog Haven's specialty sauces.  It wouldn't be "The" breakfast sandwich without it!

Recipe of the Week
Dilled, Crunchy Sweet Corn-Salad with Buttermilk Dressing
This no-cook salad is the perfect solution when it's too hot to turn on the stove!  Substitute it for coleslaw or potato salad at your next barbeque!
 
For the Salad:
  • 1 clove shallot, halved lengthwise and thinly sliced
  • 3 ears fresh, uncooked corn, with kernels scraped from the cobs with a sharp knife (about 2 3/4 cup)
  • 4 Persian cucumbers, quartered lengthwise and sliced cross-wise into 1/2 inch dice
  • 1 long red sweet pepper, seeded, ribs removed and diced
  • 1 small handful fresh dill (about 4 smallish sprigs), minced
  • 1/4 cup minced parsley
  • 1 handful crumbled Feta cheese, as a garnish
For the Dressing:
  • 1/4 cup buttermilk
  • 2/3 cup plain Greek-style yogurt, stirred
  • 1 tbsp white wine vinegar
  • 3 tablespoons minced Vidalia or other sweet onion
  • 1 small clove garlic, minced and mashed with a pinch of salt
  • 1/4 cup extra-virgin olive oil
  • salt and freshly ground pepper to taste

Directions:
  1. (Pro Tip!)  Salt the shallot slices in 1/2 tsp. salt and allow to sit about 20 minutes to draw out any harshness.  Rinse well with water and pat dry with a paper towel.
  2. In a large bowl, toss the corn kernels lightly to separate them, add the shallot and remaining salad ingredients, and toss again to combine.
  3. In a smaller bowl, combine the buttermilk, vinegar, onion, yogurt, and garlic, and whisk to combine.  Add the oil in a slow stream, whisking, until amalgamated.  Season with freshly ground pepper and salt to taste.
  4. Serve the salad chilled, garnished with feta cheese.  Pass the dressing separately.
