Summer Brings Berries!

Blueberries, blackberries, and raspberries all made their first appearance at the Market last weekend (cherries too!) and this Saturday is sure to bring more!  Come by to taste, and pick up all your fresh salad needs while you're there.  Join us at Barrett Elementary School in Arlington on Saturday, June 23, from 8:00 am to 12:00 pm.  We'll see you at the Market!

Jennie Mae's Baked Goods of Arlington, Virginia



Sometimes only a cookie can make the day complete!  Jennie Mae's baked goods are are fresh as they come, made locally right in Arlington Forest.  Try a Kahlua cookie (look for the sprinkles), a homemade baked donut (yum!), or the fantastic chocolate-chip pumpkin bread (by the slice or by the mini-loaf).  Muffiins, brownies, and more cookies round out the offerings, vegan and gluten-free options abound, and there are samples, always.  As Jennie says, happiness is homemade!

Mixed Berry Cobbler

Sweet, cooked berries are a wonderful complement to meat and fish, try Grilled Salmon Steaks with Savory Blueberry Sauce (visit LRFM vendor Cold Country Salmon for the salmon), Pork Chops with Blackberry Port Sauce, or Chicken Cutlets with Fresh Raspberries (LRFM vendor Honey Brook Farms has the pork or chicken).  Or use your berries for a simple, refreshing salad:  Mixed Berry Salad with Mint.  Or just go all out with this easy and delicious summer cobbler!

Ingredients
Filling
  • 8 cups assorted berries
  • 3/4 cup granulated sugar
  • 1 lemon, juiced and zested
Struesel Topping
  • 4 1/2 tablespoons granulated sugar
  • 1/2 cup plus 1 tablespoon dark brown sugar
  • 1 3/4 cups all-purpose flour
  • 1 pinch ground cinnamon
  • 6 tablespoons (3/4 stick) unsalted butter, melted and cooled
  • 1 pinch salt

Directions

Grease a 9- by 13-inch baking dish. Preheat oven to 350°F.

In large bowl, mix together fruit, sugar, lemon zest, and juice.

Place fruit mixture in the baking dish.

In a separate bowl, combine all of the streusel ingredients. Use your fingertips to blend mixture together. Sprinkle the mixture over fruit.

Bake for 45 minutes or until topping is golden brown and fruit is bubbling.

Serve with ice cream or whipped cream, as desired.


Technique tip: Reduce the amount of sugar in the filling if your berries are very sweet. Make streusel ahead of time and put in zip-lock bag in freezer. It's OK if the streusel is frozen when placed on berries before baking.
