Continue your celebration of America with fresh, local produce from the Lubber Run Farmers Market.  July is upon us, which means new offerings will become available.  Check out the produce calendar below and pick up your favorites at Barrett Elementary School in Arlington on Saturday, July 7, from 8:00 am to 12:00 pm.  We'll see you at the Market!

La Coop Coffee of Washington, D.C.



La Coop Coffee Company owner Juan Luis Salazar Cano hales from Guatamala and still has family there who are involved in growing coffee.  He selects beans on site and has them shipped to the D.C. area and roasts them locally.  La Coop deals exclusively in fair trade coffee -- each bag identifies the specific farm and individal farmer that produced the beans.  This unique "micro-lot" approach lets each farmer's harvest stand on its own, preserving its unique qualities and showcasing the hard work of every farmer with which La Coop works.  La Coop offers a great LRFM special:  Buy any bag of beans and get an 8 ounce coffee free.  Stop by for your pick-me-up next time you're at the Market! 
Recipe of the Week
Grilled Corn Salsa
Is there a better way to celebrate summer or Independence Day than with sweet corn salsa?  I can't think of one!  This recipe makes a great, farm-fresh dip for any backyard barbecue.  Pick up some sweet corn at the market this Saturday and mix some up!

Ingredients

For the salsa
  • 5 ears of yellow corn, husks removed
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • 1 avocado, chopped
  • 1 c. grape tomatoes, quartered
  • 1/2 red onion, finely chopped
  • 2 tbsp. sliced basil
For the Dressing
  • 1/4 c. extra-virgin olive oil
  • 1/3 c. lime juice
  • 1 clove garlic, minced
  • 1 tsp. crushed red pepper flakes
  • kosher salt

Directions

Brush corn with olive oil and season with salt.  Grill for 8 minutes, or until the kernels begin to char.  Let cool slightly, then slice the kernels off the corn with a knife.

In a large bowl combine corn, avocado, tomatoes, onion and basil.

In a medium bowl, combine olive oil, lime, garlic and red pepper flakes.  Season with salt and whisk until smooth.  Pour mixture over the salsa and stir until ingredients are fully coated. 

Serve with tortilla chips.
