Eat the Rainbow!

Eating fresh fruits and vegetables in all the colors of the rainbow is a great way to eat healthy and get a wide array of vitamins and minerals.  Shop the spectrum at the Market this Saturday and take the rainbow challenge!  Can you eat a rainbow today? Twin Springs Fruit Farm of Adams County, Pennsylvania



Twin Springs Fruit Farm is located near the village of Orrtanna in the heart of the Adams County Fruit Belt.  The farm is 100+ acres in size, and rents an additional 30 acres from a neighboring farm for vegetable and melon production.  Twin Springs currently operates as a family farm, with Aubrey King and his two sons, Michael and Jesse, as owners and growers.  Twin Springs prides itself on its sustainability and green practices, and operates with an extremely low carbon footprint.  Visit Twin Springs at the LRFM for fresh-from-the-farm fruits and vegetables in all colors of the rainbow and (insider's tip!) ask about the honey collected from bees who work on the farm!

Rainbow Salad with Sweet Ginger Miso Dressing

It's easy to Eat the Rainbow!  Try these color-coded recipes:  RED -- Chilled Tomato and Beet Soup; ORANGE -- Savory Butternut Squash and Tomatoes; YELLOW -- Lemon-Pepper Corn Pasta; GREEN: Italian-Sausage Stuffed Zucchini; BLUE -- Creamy Blueberry Chicken Salad; and PURPLE -- Ginger-Miso Glazed Eggplant.  Or combine the whole spectrum in a Rainbow Smoothie or this gorgeous (and nutritious!) salad!

Ingredients

For the Rainbow Salad
  • 1 big handful of fresh spinach
  • 1 big handful of de-stemmed and finely chopped kale
  • 1 raw grated beet
  • 1 cup cherry tomatoes, sliced in half
  • 6 small radishes, thinly sliced
  • 1 cup shredded purple cabbage
  • 2 carrots, grated
  • 1 tbsp each sunflower seeds and pumpkin seeds
  • 1 avocado, diced

For the Sweet Ginger Miso Dressing

  • 1/4 tbsp water
  • big chunk of peeled, fresh ginger
  • 3 tbsp tahini
  • 2 tbsp pure maple syrup
  • 2 tbsp miso paste
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce (or gluten-free tamarind)

Directions

To make the salad dressing, blend all ingredients until smooth. If desired, add more water to adjust consistency. Season with salt and pepper, if desired.

To assemble the salad, add everything to a bowl and top with the dressing.
